Croissants and Schaumrollen
Course description:
You will learn step by step how to prepare homemade butter laminated dough, from which we will jointly create croissants, pain au chocolat and schaumrollen that simply melt on the tongue. The course is suitable for beginners, but even more experienced bakers will benefit from it.

Course description:
You will learn everything about leavened dough and how to prepare it properly from start to finish. We will then use different types of dough to make fluffy cakes, toast bread and rolls. Beginners and intermediate bakers are welcome to attend this course.

About the instructor:
Michaela Pelíšková is an experienced baker. She was first attracted more to pastry-making, but baking ultimately won her heart. After gaining her initial work experience in České Budějovice, Míša came to Prague and, following a brief stint at Antonínovo pekařství, she is now a fixture at the Café Savoy. “After completing my apprenticeship, I had no idea what leavening was or how to work with it,” says the now experienced baker, adding that the never-ending process of learning and experimenting is what she likes most about baking. She most enjoys making croissants and baguettes, a skill that she perfected during an internship abroad. “All it takes is a small mistake and the whole effort is wasted,” Míša says, describing the need for precision in her work. In the baking course, she will reveal to you the secrets of doughs – from preparing and shaping them to baking and filling them. Leavened, puff-pastry and croissant doughs will no longer be a mystery to you.
Even though baking has been a lifelong passion for Míša, she doesn’t bake so much at home. She sometimes delights her family with a pan of yeast rolls or strudel. Míša prefers to spend her free time on her other great passions – aviation and model airplanes and travelling.
