We've already opened a Slovak restaurant twice for a few days. The pop-up, directed by creative Ambiente chef Tomáš Valkovič, offered a taste of what Slovakia means to him on a plate. Lokše, halušky and perky with plum jam were served. The tasting dinner showed that Slovak cuisine has its own character, although it is difficult to define.


We then took an inspirational journey to Slovakia to continue our exploration of Central European cuisine. "We're also toying around with the idea of a Slovak restaurant at Ambiente and I believe that one day we'll open a nice place with good food, drink and music – not a folky open-air museum," says Tomáš Valkovič of his plans.
